Happy Spring!

INGREDIENTS


½ cup chopped cooked
chicken breast
3 tbsp. chopped Fuji apple
2 tbsp. chopped black or
red grapes
2 tbsp. Jif® Extra Crunchy
Peanut Butter
1 tbsp. lite mayonnaise
2 tsp. honey
Iceberg lettuce

DIRECTIONS
1. Chop chicken meat and
fruit, mix in bowl.
2. Mix in peanut butter,
mayonnaise, and honey.
3. Spoon into open lettuce
leaf, roll, and serve
INGREDIENTS


2 cups Pillsbury BEST® All
Purpose Flour
2 tbsps. sugar
1 tsp. grated lemon peel
1/2 tsp. salt
1/2 stick Crisco® All-Vegetable Shortening Sticks
or 1/2 cup Crisco® All-Vegetable Shortening
1/4 cup cold water
1 large egg
1 tsp. white vinegar
2/3 cup Smucker's® Mango Jam
or 2/3 cup Smucker's® Peach Preserves
3 cups Crisco® Pure Vegetable Oil
1/4 cup sugar
1/8 tsp. ground cinnamon

DIRECTIONS
1. COMBINE flour, 2 tablespoons sugar, lemon
peel and salt in large bowl. Cut in shortening with
pastry blender or two knives until fine crumbs
form. Beat water and egg in measuring cup. Stir
in vinegar. Mix into dry ingredients with fork until
evenly moistened.
2. ROLL out half of dough at a time on lightly floured
surface to 1/8-inch thickness. Cut with 3 1/2-inch
round cookie cutter. Place heaping teaspoon of
preserves in center of rounds. Moisten edges of
round with water. Fold in half. Seal edges with fork.
3. HEAT oil in 3-quart saucpan to 375°F. Fry 2
or 3 empañadas at a time for 1 to 2 minutes or
until golden brown, turning several times. Drain
on paper towels. Combine 1/4 cup sugar and
cinnamon in shallow bowl. Roll warm empañada
in sugar cinnamon mixture.
General Information

Makes: 18 to 20 empañadas
Preparation Time:
20 minutes
Cooking Time: 20 minutes
TIP: To bake in oven, heat oven to 375°F. Place
filled empañadas on cookie sheet. Brush with
milk. Sprinkle with sugar cinnamon mixture.
Bake 16 to 20 minutes or until light brown.

Celebrate cinco de Mayo at home with a delicious dinner



Enchiladas

Ingredients
Grapeseed oil (or another high smoke-point oil such as peanut or canola oil)
12 corn tortillas
1 medium onion, chopped
1 clove of garlic, minced
1 cup of salsa (Mild prepared salsa or make your own using cooked or canned tomatoes, roasted green chiles, onions, cilantro, oil and vinegar. Do not use salsa made with fresh, uncooked tomatoes for this dish.)
3 Tbsp of tomato paste
1 cup water
1 cup of canned crushed tomatoes (preferably fire roasted)
Olive oil
1 lb of jack cheese, mild cheddar or longhorn or any mild yellow cheese, grated
A handful of cilantro
1 cup of sour cream
Half a head of iceberg lettuce

Directions
1 Preheat oven to 350 degrees F.
2 In a large fry pan at high heat add 3 Tbsp of grapeseed oil. Add a tortilla to the pan. Cook for 2-3 seconds, lift up the tortilla with a spatula, add another tortilla underneath. Cook for 2-3 seconds, lift again, both tortillas, and add another tortilla underneath. Repeat the process with all the tortillas, adding a little more oil if needed. This way you can brown and soften the tortillas without using a lot of fat. You do this process to develop the flavor of the tortillas. As the tortillas brown a little, remove from the pan one by one to rest on a paper towel, which absorbs any excess fat.
2 Sauté up the chopped onion and garlic, then turn off the heat. Add 1 cup of salsa. Dissolve 3 Tbsp of tomato paste into 1 cup of water, add to pan. Add 1 cup of crushed fire roasted canned tomatoes. Taste. If the sauce tastes too vinegary, add a teaspoon of sugar.
3 Put some olive oil on the bottom of a large casserole pan. Take a tortilla, cover 2/3 of it lightly with the shredded cheese, then roll up the tortilla and place it in the casserole pan. Continue until all tortillas are filled and rolled. Add sauce to the top of the tortillas in the the casserole pan. Make sure all are covered with the sauce. If not, add a little water. Cover the whole thing with the rest of the grated cheese. Put the casserole in the oven for 10 minutes or until the cheese melts.
4 Garnish with cilantro and sour cream. Serve with sliced iceberg lettuce that has been dressed only with vinegar and salt.





Mexicana Rice
Ingredients
2 tablespoons olive oil (can use up to 1/4 cup)
1 onion, chopped fine1 garlic clove, minced
2 cups of medium or long-grain white rice
3 cups* chicken stock (or vegetable stock if vegetarian)
1 heaping tablespoon tomato paste or
1 cup of diced fresh or cooked tomatoes, strainedPinch of oregano
1 teaspoon salt


Check the instructions on the rice package for the proportions of liquid to rice. They can range from 1:1 to 2:1. If your rice calls for 2 cups of water for every cup of rice, then for this recipe, use 4 cups of stock for 2 cups of rice.

Directions
1 In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.
2 In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.
Serves 4 to 6.

Watermelon Agua Fresca

Ingredients:
8 cups watermelon pieces (about 2 1/2 pounds), plus 8 small wedges 1 cup silver tequila 1/4 cup triple sec 4 to 6 limes, cut into wedges Ice, for serving

Directions:Using a blender or food processor, puree the watermelon pieces in batches; strain into a large pitcher. Stir in the tequila and triple sec and refrigerate until cold, about 1 hour. Squeeze a few lime wedges into the agua fresca. Serve over ice, with additional lime and watermelon wedges on the side.






The basics of a Margarita is simple (and sometimes simplicity is best): Tequila, orange liqueur, and lime juice. Using only these three ingredients equals a true Margarita. Try 2 oz Tequila, 1 oz orange liqueur, and 1 oz fresh lime juice then shake that with ice and strain that into a glass with or without ice. This is the original way.The sweet orange liqueur should be all the sweetness a true Margarita needs.
